CIEH Level 2 Awards in Food Safety
Fundamental food hygiene knowledge for all food handlers

Overview:
The CIEH has launched the CIEH Level 2 Award in Healthier Food and Special Diets, an accredited nutrition qualification in light of increased public interest in this area. Consumers have become increasingly aware of the effects of a poor diet and businesses are keen to understand the links between diet and health to meet changing customer demands.
The qualification covers the following topics:
- The relationship between nutrition, diet and health
- The nutritional requirements of different population groups
- Current policy, legislation and voluntary guidelines
- The effects of food processing on nutrient content

CIEH Level 3 Award in HACCP in Catering
Provides business owners, managers and supervisors of small, medium-sized and large catering operations with a thorough understanding of how HACCP-based procedures are applied in catering. Why is this training important?
EU legislation requires food businesses have a documented food safety management system in place, based on HACCP principles.
HACCP has, however, been particularly difficult to establish in catering businesses, because of the sheer number and variety of processes involved in preparing and serving food. This practical, accessible and user-friendly qualification has been created to help caterers comply with EU legislation and provides a thorough understanding of how HACCP-based procedures can be applied in a catering context. It also provides the flexibility to suit different types of businesses.

- Codex principles of HACCP
- Food safety management tools
